The EC-1118 yeast (Saccharomyces cerevisiae bayanus) has the ability to ferment at low temperature, good flocculation and excellent alcohol tolerance. This makes EC-1118 an excellent strain to be used in a wide range of applications such as sparkling wines, fruit wines, meads, and brewed soft drinks. Ideal for small batch homebrew wine making
It is frequently used as a generic inexpensive wine yeast for limited skill wine making.
- LALVIN EC-1118 yeast has low foam formation
- Does not generate SO2, H2S, and other undesired acids or esters.
- Optimum fermentation temperature 14o – 18°C.
- Minimum starting temperature is 12°C.
- Fermentation temperature should not exceed 30°C.
- Lower temperatures may require higher dosage.
- 5 grams is suitable for 4.5 to 23 litres.
- LALVIN EC-1118 yeast may produce up to 18% ABV.
