Wine Must additives are used for different purposes when making home brew wine. Firstly they may work to stabilise the wine and limit oxidisation after fermentation. This often through the use of Sulfites. Or they may be clarifying agents or additives used to change the structure of the Must before filtering and bottling. They may also be an additive to influence acidity or to neutralise undesirable chemical or taste outcomes of the wine making process.
