LALVIN EC-1118 General Purpose Wine Yeast
The Lalvin EC-1118 general purpose wine yeast (Saccharomyces cerevisiae bayanus) bundle of five (5) sachets is a champagne style yeast with the ability to ferment a range of edible organic starches, has good flocculation, and excellent alcohol tolerance. Produces vegetable wines with a neutral aroma. It is a vigourously fermenting yeast. EC-1118 is a suitable strain for use in brewing: basic table wines, simple sparkling fruit wines, meads, ciders, and brewed soft drinks. For maximum efficiency each sachet requires activation before use.
- LALVIN EC-1118 requires rehydration for 20 minutes at 35°C-37°C before use.
- Activated yeast starter must cool to 25°C before use.
- Do not use yeast starter which is older than 45 minutes..
- Operating temperature range 10°C–30°C.
- Recommended fermentation temperature: 20°C–25°C.
- This yeast has low foam formation.
- Does not generate SO2, H2S, and other undesired acids or esters.
- 5 grams is suitable for 4.5 to 23 litres at recommended temperature range.
- Lower temperature fermenting will require higher yeast dosage.
- LALVIN EC-1118 yeast may produce up to 18% ABV.
